Wild Garlic Pesto

At this time or year the woods in Cornwall are full of wild garlic Allium ursinum which can be used to add flavour to many dishes. This year I made   a good pesto sauce which goes well with fusiili pasta. Make the most of it within weeks the wild garlic dies back below ground.

Gather a large hand full of wild garlic leaves

gather same amount of parsley

add the same amount of fresh basil leaves

The Juice of one lemon

2 tablespoons Olive Oil

1 cup pf Pine nuts

Parmisan Cheese 60 grams

salt and pepper to seaon.

Chop the herbs and place all the ingredients in a food processer and reduce to a paste.
