WELSH GRIDDLE CAKES
Baked on a griddle iron in the garden for Tea. They dont last long!
8 OZ SELF RAISING FLOUR
3 OZ BUTTER
1/4 TEASPOON SALT
3 OZ CURRANTS ( ALSO GOOD MADE WITH MIXED FRUIT)
1/2 TEASPOON CINNAMON
1/4 TEASPOON GROUND NUTMEG
Rub the fat into the flour, Add the dry ingredients, Add the egg and enough water to mix to a stiff paste.
Roll out or flatten to about 1 inch thick cut into rounds or shape them.
Bake them on a griddle iron over hot embers.
Serve as soon as they are done.
CAN BE BAKED IN AN OVEN INSIDE!
