DORSET APPLE CAKE

The three south western most counties of England are known for Cream teas and also traditional apple orchards and Cider. This is a traditional spiced apple cake and  comes from  a Tea garden at Charmouth in  Dorsert.

9 0Z SELF RAISING  FLOUR

8 OZ COOKING APPLE( Bramleys seedling) finely chopped wght after peeing and coring

1 RED EATING APPLE cored and cut into thin circles( Devonshire quarrendon apple or other sweet red apple).

8 oz BUTTER

8 oz CASTER SUGAR

1 OZ CORN FLOUR

4 LARGE EGGS

1 TEASPOON CINNAMON

1 TEASPOON MIXED SPICE

 FOR TOPPING- LEMON JUICE AND SOFT BROWN SUGAR

 WATER TO MIX

Placed the slices of red eating apple on in a bowl with the lemon juice.

Sift the flour with the cinnamon and spice

Cream together the butter and sugar, Beat the eggs, Add the beaten eggs to the sugar / butter alternatively with the flour,

Mix the cornflour with the chopped cooking apple and then add to the mix carefully folding the chopped apple into the cake mix.

pour into a 7 inch lined cake tin. 

Place the sliced red eating apple on top and dust these with brown sugar.

Bake  one to  one and a quarter hours intil it is done testing with a needle. at 170 C
