DEVONSHIRE CREAM TEA
When I was a kid eating out in the garden was quite an alien concept in the uk with the exception of TEA in the garden. Devon in particular is known for its cream teas. I have even seen Devon Cream Teas in remote parts of New Zealand.
FRESHLY BAKED SCONES SERVED WITH CLOTTED CREAM AND STRAWBERRY JAM
SCONES
1 LB SELF RAISING FLOUR
1 TEASPOON SALT
4 oz BUTTER
2 oz Sugar
1/2 pint MILK
Egg white to glaze( optional)
Sift the flour and add the salt and rub in the butter add the milk and mix to a spongy dough. roll out to 3/4 inch thick shape into small rounds glaze the top with a little egg white and bake 425F 10-15 MIN Do not brown them
While still warm split in half horizontally
Place a large spoon full of clotted cream on top of each slice and then a spoon full of strawberry jam on top of the cream.
If you cannot get clotted cream , whipped cream can be used but not as good.
Served with any good Inidian tea. Assam, Darjeeling, Ceylon.
