SPAGHETTI WITH RUNNER BEANS AND SUN DRIED TOMATOES
Do not be put off by the English title this is a simple recipe from Florence in Italy.
60ml extra virgin olive oil
3 cloves of garlic peeled and thinly sliced
400 grams of peeled plum tomatoes
500 g spaghetti
350grams of green beans trimmed
90 grams sun dired tomatoes chopped
Boil salted water in a large pan. Cook the pasta and green beans together in the pan of boiling water.
Meanwhile heat the oil in a large frying pan. Add the garlic and sun dired tomatoes do not brown.
Add the tomatoes and cook until the sauce has thickened.
When the pasta and beans are cooked drain and add to the sauce. turn together over heat and then serve with some crustry bread
