Normally sandwiches in our house are of the doorstep variety. Thin Cucumber sandwiches are a traditional summer sandwich in the UK to serve with tea or Champagne!. This method is more refined and follows garden party standards. This method /recipe was given to us years ago by one of the Palace chefs.This is a fitting end for a home grown cucumber that has been nurtured all summer.
I CUCUMBER FRESHLY CUT ( PREFERABLY HOME GROWN)
FRESH GOOD QUALITY THIN CUT WHITE BREAD(It should be springy not doughy)
FRESH GOOD QUALITY BUTTER AT ROOM TEMPERATURE worked with a knife to make it spreadable
2 TABLESPOONS OF GOOD QUALITY MELLOW WHITE WINE VINEGAR( aged in oak barrels)
SALT AND WHITE PEPPER(optional)
Peel the cucumber and cut into thin circular slices.
Place the cucumber in a shallow dish and sprinkle with salt.
put some white wine vinegar over the slices and leave for 10 -15 minute but no longer
After 10-15 minutes drain off the juice and vinegar thoroughly and dry the slices by dabbing them with kitchen towel
Butter the bread on one side with a thin layer of butter right to the edges.
Place one or two layers of cucumber on the buttered bread slice and cap it with the second slice. remove the crusts and cut into squares 50-60mm . They go well with sandwiches made from thin Scottish smoked Salmon.
