This is popular on the beautiful Island of Madeira.

You will need some fresh bay leaves and some bay sticks( Laurus nobilis)

 1&1/2 kg good lean steak in large cubes

8 cloves of garlic peeled and chopped

6 bay leaves

some coarse crushes sea salt

 1 cup of Madeira wine

 Pound the bay leaves and garlic in a mortar and pestle and add the wine and salt.

Marinade the meat overnight in the mixture in the fridge.

Put the meat on to skewers made of fresh bay sticks and grill over hot charcoal.
