MINESTRONE SOUP
2 Medium sized onions finely chopped
2 large cloves of garlic finely chopped
3 new potatoes peeled and chopped
2 Large carrots finely chopped
2 sticks of celery finely chopped
2 zuccini halved down the middle length ways and chopped
1/4 white cabbage finely chopped
two hand fulls of runner beans stringed and finely chopped
500 grams of very ripe plum tomatoes chopped
1 table spoon of sun dried tomato paste
1 tablespoon of olive oil
1/2 tablespoon of fresh chopped oregano
1/2 tablespoon of fresh basil finely chopped
3 table spoons of macaroni
1 pint of chicken stock
salt and pepper to season
Heat the oil and saute the onion and garlic , do not brown them,then add the carrot and celery to soften, Add the remaining ingredients and simmer gently for 20 minutes.
Serve with some crusty bread
