TOMATO AND BASIL SOUP

1 kg ripe  tomatoes(skins removed)

3 large cloves of garlic whole

1 level tablespoon full of fresh Basil finely chopped

500ml(1 pint) good vegetable stock

salt and black pepper to season

Roast the cloves of garlic. Usually 10 minutes in a hot oven is enough to soften the pulp.

To skin the tomatoes place in a pan of boiling water for a minute and remove them. The skin comes off easily

Place the tomaties, pulped roasted garlic and basil in a food processor and blitz them

 Add the mixture to a saucepan with the stock simmer on low heat for 10-15 minutes.DO NOT BOIL,

Season and serve with crusty bread
