VEGETABLE RATATOUILLE

It is good at this time of year to use all the fresh produce from the garden. This is good on its own or with other dishes
3 Large Onions peeled and chopped
4 Cloves of garlic peeled and sliced
2 Aubergines thickly sliced
2 Courgettes sliced
2 Red Peppers, 2 Yellow Peppers seeded and quartered
6 Ripe plum tomatoes or beef steak tomatoes sliced
2-3 spigs of fresh thyme
A hand full of Basil chopped
4 Tablespoons of Olive oil
Saute the onions and garlic and set asided in a large roasting tray
Fry each of the vegetables seperately in batches and place in the roasting tray with the onion and garlic. Add the tomatoes, thyme , basil and season with black pepper and salt. Bake for 40 minutes in the oven gas mark 4, 180C
