SUMMER FRUIT PUDDING
At this time of year there is a plentiful harvest of soft fruit berries in the garden.
This recipe is a favourite when we have friends and family come to lunch in the garden and a good way to use mixed fruit berries. Needs to be made a day before.
It is very simple to make.
INGREDIENTS
1 Kg mixed berries,(1& 3/4lb) (Rasberries, Blackcurrants, Blue berries,Blackberries, Gooseberries, Loganberries)
50g (2 oz) caster sugar
8 slices of white bread( preferably day old) crusts removed
Cherry brandy 2 tablespoon plus
METHOD
Place the berries and sugar in a pan and heat for 4-5 minutes do not boil them, Set them aside to cool. Add a spoon of water if necessary.
Line a deep basin with the bread making sure it overlaps.Splash some cherry brandy on the bread.
Pour in the berries to the top of the basin and add another layer of bread over the basin. splash a litlle more cherry brandy on the top.
Place a plate over this with a heavy weight on top and place in the refrigerator over night.
The next day turn the basin out onto a plate. The bread should have turned to the colour of the berries. If there are any white bits pour a little more cherry brandy on.
Good served with Devon clotted cream
