  • Katie S.Anybody have a favorite recipe for leeks? I grew them for the first time this year on a whim. They are not huge like the ones at the green grocers, but enough to do something with!

    Sautee cut leeks with onions, add to already cooked chicken broth and new potatoes. Add white pepper and a bit of cream.

  • MJ MJ Leek and Potato soup, but a different version - 1 onion, lots of chopped up leeks, 'old' potatoes chopped up, sweat them all for ten minutes, add good chicken stock, cook till veggies all soft, whizz up in the processor. Should be enough potatoes (of the sort that go soft when cooked) to make a thick soup. Add a swirl of single cream when serving, with a sprinkle of black pepper. Serve with good crusty bread. Fantastic on a cold winter's day.

    minus the fennel. I also only pureed 1/3 of it because I like it chunky. We spinkled it with cheddar cheese. Yum!

  • Felicity S. Felicity S. Potato and Leek Soup. You can make the stock now and freeze it for later use. Clean and cut up fine {the leeks) then put them in salted water and boil until the leeks are mush. Good Luck
